Cascadian Frechette
Finalist at the “2011 Good Food Award” San Francisco
The delicate rind has been washed several times throughout its affinage and will take on a pale cream color marbled with mold. This semi-soft paste is approximately five weeks or more and offers a medium distinctive and complex flavor. Ingredients: Pasteurized goat’s milk, cultures, salt, rennet. Certoux
Winner at the “2012 Good Food Award” San Francisco
The name certoux is a patois (dialect) word of the Savoie region of France meaning cellar. A semi-soft paste with a naturally aged and complex rind gives this cheese a rich flavour with a pleasant tangy taste. Aged for approximately one month.

Tomme de Sawtell
2009 3rd place ADGA Cheese competition, Buffalo, NY
This tomme offers hints of mushroom and mineral flavors to your palate. This is a mild cheese and may have small holes but it’s full of flavour. The rind varies between a blue and tan rustic pigmentation. It is a wonderful cheese to snack on with a glass of Pinot Noir, rustic bread and grapes! Aged beyond 60 days. Pur et Simple

Tomme Culvrée
Copper colored is the result of a Brevi Linens washed rind with an elastic semi-firm pale yellow interior. This buttery flavored tomme has a slight sharpness as it aged beyond 3 months. Ingredients: Raw goat’s milk, cultures, salt, rennet, enzymes, annatto. Weight 3-4.5 lbs wheel

Tomme des Vignes
Is a wonderful farmer’s tomme that should be a daily staple. Rich with nutty simplicity but with some sharpness, this cheese takes on the terroir of the Willamette Valley. It is ritually washed in balsamic vinegar and its affinage last several months beyond the required two months. Ingredients: Raw goat’s milk, cultures, salt, rennet, enzymes. Weight 3-4.5 lbs wheel
