Made from the high-quality milk of the resident Alpine herd, our cheeses are crafted on a small-scale in a traditionally artisan manner. The inventiveness and skill incorporated in the production process makes the unique quality of these rustic cheeses a true exception. The cheeses are inspired by the memories of my French upbringing in the Savoie region of France.

Cascadian Frechette

Finalist at the “2011 Good Food Award” San Francisco

The delicate rind has been washed several times throughout its affinage and will take on a pale cream color marbled with mold. This semi-soft paste is approximately five weeks or more and offers a medium distinctive and complex flavor.  Ingredients: Pasteurized goat’s milk, cultures, salt, rennet. Certoux

Winner at the “2012 Good Food Award” San Francisco

 The name certoux is a patois (dialect) word of the Savoie region of France meaning cellar.  A semi-soft paste with a naturally aged and complex rind gives this cheese a rich flavour with a pleasant tangy taste.  Aged for approximately one month. Pur et Simple

This cheese was named after my childhood home in Savoie.  It was the only house in    the area with a thatched roof and the outside of this cheese has all the visionary characteristic of it!  A washed rind gives it that stinky cheese flavour so sought out by the cheese aficionados.  It is creamy and rich in the fall and winter and firmer in the summer.  It is made less regularly as the other cheeses as it is more fussier.  It typically weights about 5 lbs. square.  29.60/lb shipping not included*

This fruity tomme offers hints of mushroom and mineral flavours to your palate.  This is a rich cheese with a varied rind pigmentation which changes with the seasons.  it is a wonderful cheese to snack on with a fine glass of Pinot Gris, rustic bread and fruit!  Aged beyond 60 days.  Ingredients: Raw goat’s milk, cultures, salt, rennet. Copper colored is the result of a Brevi Linens washed rind with an elastic semi-firm pale yellow interior.  This buttery flavored tomme has a slight sharpness as it aged beyond 3 months. Tomme des Vignes

Is a wonderful farmer’s tomme that should be a daily staple. Rich with nutty simplicity but with some sharpness, this cheese takes on the terroir of the Willamette Valley. It is ritually washed in balsamic vinegar and its affinage last several months beyond the required two months. Ingredients: Raw goat’s milk, cultures, salt, rennet, enzymes.
